We make awesome big salads and add hard boiled egg and chicken (white meat bought bulk from Costco's rotisserie chickens) to make them a complete meal. Ours tonight had romaine, spinach, carrots, pea pods, cherry tomatoes, red pepper, onion, cucumber, diced apple plus the egg and chicken. I top mine with blue cheese, my hubby likes shredded cheddar. I love Newman's Own Raspberry Walnut vinaigrette dressing. At least half the veggies are grown in our own garden. Nothing beats a fully ripe cherry tomato picked fresh, especially the orange Sun Gold variety. We make it big enough that it lasts two days.

Thinking it just might fit my very meagre budget this fortnight to purchase it so I could play with some stunning Jinny Beyer Fabric that I have in my stash. When it gets done I will send a photo!
